5 of the best Boxing Day leftover feasts

Published: 19 December 2018 | Category : Seasonal | Author: Michael Shaw

Boxing Day is the perfect chance to relax at home with friends and family while picking through all the leftovers from the big day.

But if you don’t fancy another year of turkey curry and cold sausage rolls, why not try one of these great recipe ideas for your Yuletide leftovers…

1. Cheeseboard mac’n’cheese

If you don’t manage to finish off the cheeseboard on Christmas Day, why not put all those deliciously different flavours to good use in one amazing macaroni cheese? All you need is some pasta shapes, milk and flour, and whatever herbs and spices you want to craft your own unique taste – perfect for a cosy night on the sofa in front of a good movie.

2. Brussels sprout pate

It’s safe to say that Brussels sprouts have a bad reputation when it comes to festive food. But if it’s prepared the right way, the humble sprout can be delicious – and a Boxing Day pate is just one of those ways. Blend up your leftover sprouts with crème fraiche, lemon juice, mustard and mayo and spread over any crackers you have lying around.

3. Turkey bubble and squeak

What better way to use up all those leftovers than a great big festive bubble and squeak? Grate up some parsnips, potatoes and sprouts (don’t forget to squeeze out as much water as possible), fry up some of that turkey in gravy, and mix it all together with eggs into the form of Yuletide rostis. What else would you want to eat at Boxing Day brunch

4. Christmas pudding strudel

With so many festive desserts around these days, it’s common for the traditional Christmas pudding to get overlooked on the big day. But give the pud a new lease of life on Boxing Day with a Christmas pudding strudel! Mix the pudding with mascarpone and Baileys and wrap the mixture in filo pastry — perfect served warm with custard or cream.

5. Mulled wine

Didn’t get through all that red wine you were given for Christmas? Don’t worry, you’ve got a great excuse to make use of it. Mix red wine with cinnamon, cloves, allspice and some orange and lemon rinds and simmer gently to give you the perfect winter warming for curling up on the sofa with a festive flick.
